National Cheese TUESDAY @ the MSC
Good Morning!
What's your favorite cheese (mine is Swiss).
There is no firm evidence of how humans discovered cheese making. But legend tells us it was likely that someone created the first cheese by chance. Thousands of years ago, people transported milk and stored it in sheep's stomachs. Left to sit a few days, the proteins would separate into curds and whey. From there, preserving the solids with salt may have seemed a logical next step. Salt was a highly valued preservative in ancient times.
Only thing on our agenda today is my 4:00 appt with PCP to figure out why both my Red & White blood cell counts are super low (along with a few other things). My Thyroid level remains high (about 6 months now) which is very odd because I've been treated for an UNDER active (pretty much a dead) thyroid since I'm 22. Im guessing ulner nerve issue will stay on the back burner until this other stuff is figured out. I'm not lying when I say I'm nervous.

I like many of cheeses....just depends what I'm putting it on or in. Swiss, Pepper Jack, Nacho, American....I can roll with those & be happy.
Just got done with Eye appointment...still getting over the dilation. Cataracts getting a little cloudier. I thinking May is when I'll get it taken care of.
Kudo's to Indiana Hoosiers for winning College Football Championship. If you've watched the basketball movie "Hoosiers", this football story is just as amazing.

Ken - get that cataract fixed..
I'm tending to household things today - a little normal cleaning and laundry. Tomorrow I'll do a bit more purging again.
Cheese? I love most all of them. Not a fan of most types of bleu cheeses and extra bitter/sour'ish Swiss cheeses. AND Limburger cheese. My Dad used to love it.

Good morning all..... My favorite cheese is probably Jarlsberg Swiss, but that's kinda an oxymoron 'cuz it ain't Swiss, it's Norwegian. I'm also fond of Danish Havarti and it's hard to beat a good aged cheddar. Our neighborhood market has a good smoked Gouda that we get once in while. Come to think of it, I like most cheeses, 'cept the moldy ones....

Hoping you get answers and calmer anxieties, Linda. Chronic pain can mess with our whole system, so hopefully your care providers are considering that in addition to other potential causes.
I am not a huge fan in general, although I like milder ones when snacking. I don’t mind bleu cheese in salads as long as there isn’t too much of it. I am not one to add cheese to a dish unless it enhances the flavor.
Cold day here with lots of blowing snow. They say it will get colder and snowier as the week goes on. Oh goodie.

I had planned on taking a quick overnight trip to North Charleston Saturday. There's a minor league hockey team that plays in the North Charleston Coliseum and Saturday is Margaritaville Night. I'm going to cancel my hotel reservation, I don't feel like driving 2 hours each way in freezing rain and ice. Just rescheduled a delayed family Christmas gathering due to the weather this weekend. Fingers crossed this doesn’t turn into a repeat of the 2021 ice storm.
We installed a generator when we built the house so if it does, we will be ok.

However, once I was married, I was "forbidden" from bringing any into our house!
