Black Bean & Corn Relish

Hey everyone - several people told me that lots of people were asking who made the big clear plastic container of Black Bean and Corn Relish. I am the victum! I made 10 pounds of the stuff, but unless you got some before 12:30, it was gone.....gone....gone!

But thanks to those who did say they loved it.........I'll have to make double the amount for next year! I do share recipes, if you want it.

And I loved those caramels too.......I think I finally mine around midnight -forgot it was in my pocked - fortunately still in the wrapping!

Had a great time - in fact I just now got all the chafing dishes and utensils washed!

This one seems to work pretty well:
Corn & Black Bean Salsa

1 can black beans, drained & rinsed
1 can corn, drained
1/3 of a red onion, diced
2 tbsp fresh cilantro, chopped
Juice of 2 limes (adjust to taste)
1 tbsp olive oil
1 tsp salt, but adjust to taste
Sprinkle of cumin
Sprinkle of chili powder

Mix together, let sit for a few hours before eating
Some people never find it, some only pretend
But me, I just want to live happily ever after
